Pigroast 2001
Here are some pictures from one of our backyard pigroasts. We start by digging a hole in the ground for the bed of cooking coals then we position the pig about 12" above the coals by means of concrete blocks and expanded metal. A separate fire is used to produce the coals and they are transferred to the cooking pit as needed. It all sounds simple enough but when you get up before daylight to get the fire started and find the pig pit full of water and mud, it makes you want to crawl back in bed. Later on in the afternoon when you see a couple hundred of your close friends standing around eating, drinking and visiting you understand why you put yourself through it............and at the same time you swear you'll never do it again.............then next year when the snow starts melting and you gaze out at the pit in the backyard............
