Chicken Entrees
Herbed Chicken And Potatoes
Prepare your favorite green vegetable side dish with this recipe to create a full meal.
Serves 3-4
2 1/2 pounds of Chicken, cut up
1/2 cup Flour
1 teaspoon Oregano
1 teaspoon Basil
1/2 teaspoon Thyme
1/4 teaspoon Salt
1/8 teaspoon Pepper
3 Tablespoons Olive oil
3 medium Potatoes, cut into medium wedges
1/2 cup White wine
Mix together the flour, oregano, basil, thyme, salt, and pepper. Heat the oil in a heavy
skillet. Dredge the chicken pieces in the seasoned flour. Add to the hot oil and brown on
both sides. Remove the chicken from the pan and set aside. Add the potato wedges and brown
on both sides. Top the potatoes with the chicken. Pour the wine over the chicken. Bake in
a 375 oven, uncovered, for 25-30 minutes, or until the chicken is tender.
Chicken Provencale
Serve this light but flavorful dish at your next luncheon.
Serves 4
4 Chicken breasts, boneless, skinless
1/2 cup Flour
2 Tablespoons Olive oil
1/4 cup Green bell peppers, diced
1/4 cup Onion, diced
1 teaspoon Garlic, minced
1/4 cup Black olives, sliced
1/2 cup Tomatoes, diced
2 Tablespoons Basil, fresh, chopped
3/4 cup Wine, white
Salt and pepper to taste
Heat the oil in a large, heavy skillet. Dredge the chicken in the flour and saute. Set
aside and keep warm. Add the peppers, onion, and garlic to the pan. Cook until just soft.
Add the tomatoes, basil, and olives. Cook for 2 minutes. Add the wine and simmer until
slightly thickened. Check the seasonings. Spoon over the warm chicken.
Chicken Divan
The combination of broccoli, chicken and Parmesan
makes for a wonderful casserole.
Serves 4
4 tablespoons Butter
4 tablespoons Flour
2 1/2 cups Milk
1 Tablespoon Sherry
2 cups Broccoli, cooked, chopped
8 ounces Chicken, cooked, sliced
1/4 cup Parmesan, grated
Melt the butter in a saucepan. Whisk in the flour and cook for 3 minutes. Whisk in the
milk. Simmer for 20 minutes. Add the sherry. Set aside. Preheat the oven to 375. Add the
broccoli to a well-oiled casserole dish. Top with the chicken. Pour the sauce over the
mixture. Sprinkle on the cheese. Bake for 18-20 minutes or until lightly browned.
