Life was intended to be full and fruitful. Man was endowed with the ability to smell, feel, taste, etc. It was also predestined that we experience, savor and enjoy the multitude of the great creation. Let us not forget it was the great Creator who said, "Behold, I have given you every herb bearing seed which is upon the face of the earth, and every tree in which is the fruit of a tree yielding seed; to you it shall be for meat." (Genesis 1:29) We cannot conceive a grain of sand, an atom of gold, a molecule of iron, a drop of water or anything that is inorganic manifesting life and growth from within. Not until we thoroughly understand this all-important basic fact shall we be able to appreciate the meaning and truly wonderful life giving properties and virtues of good foods and herbs. (Advance Treaties in Herbology, by Dr. Edward E. Shook) The evidence is clear that good health is our most valuable asset. If the Creator considers our bodies to be holy temples to misuse or abuse, our bodies will be to our own detriment. Much time and love has been spent in preparing these recipes especially for you. In order for you to enjoy each recipe to its fullest extent, it will be necessary to follow the instructions given below as much as possible. For instance, if you find it necessary to deviate from the list of suggested herbs in the recipes, make sure that the herbs you choose blend together well. If they don't, your recipe will be different from that given within this book. Here is a list of some herbs that blend together well. These herbs can be found at your local food store and can be used in almost any recipe given in this cookbook. These are as follows: Italian seasoning, garlic powder, onion powder, parsley flakes, marjoram, thyme flakes and sage. Vegit seasoning, also found at your local health food store, is also very good in most recipes. All recipes in this cookbook require a lot of herbs to give your food the best taste possible. When using Parsley Patch herbs, unlike other herbs, you can use large amounts and not take away the taste of your food. Another herb that may be used in large quantities is Vegit seasoning. As with the latter herb, Parsley Patch herbs may also be found at your local health food store and some local food stores. Whenever a recipe calls for "lecithin," use slightly more that for which the recipe calls. Bickford's flavorings, also found at your local health food store, are difficult to blend. It would probably be to your advantage to stick to amounts required in the recipes; however, vanilla flavoring may be used in any recipe; lemon and banana flavoring in most recipes. I would like to share some of my experiences that my family and others have had with some of the ingredients mentioned in some of the recipes in this cookbook. Nuts and seeds -- Whenever we use nuts, we try to use almonds, walnuts, pumpkin and sunflower seeds. We especially appreciate the benefits derived from sunflower seeds. To my understanding, sunflower seeds contain proteins, zinc, phosphorous and are excellent in lowering cholesterol levels for those who eat them. Cayenne pepper -- Instead of using black pepper, we use cayenne pepper. Based upon our experience, we have found that cayenne pepper is a good aid in cleansing the body of impurities and lower blood pressure. Several years ago, I had poor circulation, and cayenne pepper, along with proper diet and exercise, was very helpful in improving my circulation. Since then, I have not had this problem. As a matter of fact, my experience with cayenne pepper has been so rewarding that friends often come over to have me share with them how this wonderful herb can be used for the common cold. Many of them are surprised to learn that cayenne pepper and carrot juice or cayenne pepper and distilled water can be very effective in eliminating the common cold. Although they are surprised, they are nevertheless usually happy with the results. Fresh garlic -- Garlic has also been a blessing in our home. We have used it in the same manner as we have used cayenne pepper and with identical results. We like to mix garlic and celery and carrot juice also. A friend of mine was losing some of his hair; he applied garlic juice to the bald spots on his scalp once daily while simultaneously taking alfalfa tablets. Now his hair is growing back nicely. Cabbage, lettuce and asparagus -- In our home, we eat a lot of cabbage, and we drink cabbage juice also. It is one of our sources for protein and calcium. We use lettuce and asparagus for minerals. These vegetables do wonders for us. Bell peppers, alfalfa sprouts and parsley -- There was a time when I ate bananas for potassium. After a while, however, I learned they were not digesting well within my system. Yet, I continued eating them because I needed the potassium for my blood pressure, which had elevated because of my eating other harmful foods. Subsequently, I developed gastrointestinal problems. My herbalist advised me to eat bell peppers and to drink bell pepper juice to get the potassium that I needed. I have found that this vegetable not only gives me sufficient potassium, but in addition it supplies a significant amount of vitamins A and C. To my understanding, alfalfa sprouts are known as the father of all foods and can prevent the onset of prostate gland problems. It is high in protein and contains vitamin A. We are told that parsley holds first place in iron content and contains vitamins A and B. It also raises the hemoglobin levels in the blood. Apples -- there is an old cliche which says, "An apple a day keeps the doctor away." In the Eubanks family, we are extremely thankful to God for apples. They are indeed a blessing. My son Jeffrey eats 10 or more at a time, and I am not far behind this number. Although we generally eat them as a meal once a day, we occasionally eat them with dates or grapes. Although 10 apples at one sitting may seem like a lot, they may not seem as such a quantity when eaten as applesauce. We eat them raw and do not add anything to them. I am told that the skin and ring of the apple are the most important parts. We usually eat them with these parts included. We have found them to be and aid in regulating the bowels and an oxygen carrier. At one time, I was very stressful. I suffered from nervous tension and anxiety. I have since found that apples quiet my nerves, relieve my anxiety and headaches, and completely relieve my stress. Some of my friends have even remarked that I have become a lot calmer. In addition to the above blessings, apples are a good source of calcium, iron, niacin, potassium, magnesium, proteins and vitamins A, B and C. Tomatoes -- Since we don't drink milk, we have found that tomatoes are also another good source of calcium, potassium and vitamins A, C, etc. These, too, are eaten by themselves. Extra virgin olive oil (cold pressed) -- Although I occasionally pour a little virgin olive oil over some foods after cooking them, I try to avoid using olive oil because I find it to be difficult to digest. However, I have found that it is good for sunburns and burns, along with other benefits. Grains (brown rice, millet, barley or corn) -- Of the grains listed above, I have found that millet and corn have been beneficial for me as far as keeping my system free of excess mucous is concerned. In this way, they have helped me to be free of colds. However, such has not been my experience with rice and barley. These two foods tend to be quite mucous forming, and when I eat them, they usually give me a cold. For this reason, I seldom eat rice and barley, and I especially avoid them during the summer months. Another food which has similar effects on me, although not a grain, are beans. I have also found them to be difficult to digest, and they tend to raise my blood pressure. I really hated giving up these foods, but now I am glad I did because I am now in the process of learning to sprout my own beans and enjoy bean sprouts. Green beans -- Another food that we especially savor in our home are green beans. We like them so much that we can eat them daily, cooked or raw, and never tire of them. We are told that green beans contain insulin; with proper diet they can prevent the onset of diabetes. Carrot and other vegetable juices -- We use vegetable juices as a meal on a regular basis. After drinking carrot juice, and/or celery juice, and other raw vegetable juices, I usually wait several hours before eating another meal. Not only are raw juices filling and refreshing, but they also aid in cleansing the body. Keeping cool and free of colds -- During the summer months, I work outside a lot. I find that by drinking a lot of distilled water, by eating lots of fresh, raw fruits, vegetables, especially corn, and by eating a variety of salads (sprinkled only with parsley Patch herbs, no salad dressing), I am able to keep cool regardless of the temperature. A nice, crisp fiber-filled bread can be added, from time to time, to further stimulate the appetite. Of course, fruit should never be combined with vegetables at the same meal. It is incredible how good I feel when I eat a raw diet. It's amazing what a proper diet can do! During the winter months, I like to eat baked sweet potatoes, occasionally baked in water instead of oil. I also like to eat millet and raw corn on the cob during these months. Since I have been on a cleansing diet for over two years, I find it quite hard to eat cooked foods. However, when I do eat cooked foods, it's usually only cooked vegetables. I stay away from flesh foods, meat analogs and other foods that are difficult to digest. Whenever I cheat, which is very seldom, the former health problems that once had tend to recur. But the good feeling generated by proper diet are sufficient inducement for me to remain loyal to my diet. "Getting high" -- the young people in my family love to eat and "get high" off raw vegetables. They give them the very high they need to help them concentrate on their studies. Along with fruits and juices, we use a variety of vegetables, including parsley and alfalfa sprouts. Gourmet raw foods -- Recently most of the family members have become raw food eaters and what a joy! We have found that raw foods along with vegetable juices help get rid of wrinkles, dark circles around the eyes, calm the nerves, relieve anxiety, control stress, give one the ability to think and remember better. Some of the family members no longer wear eyeglasses. It can build better self-esteem, promote hope, and peace and joy. People are amazed how different and how tasty the foods are. It's incredible that most people prefer the raw foods to the cooked foods. Vitamins and minerals -- We take vitamins, minerals and brewer's yeast on a daily basis to give us that extra boost for the day. Barley greens, bee pollen, brewer's yeast -- There was a time when I used barley green on a daily basis. While taking it, I found it to be an excellent means in lowering my blood pressure. It is high in proteins and also rid my body of excess weight. With a proper diet, it also cleared my thinking. We take bee pollen on a daily basis. One of the reasons I like to take it is because it contains all the B vitamins, and I don't have to be bothered with vitamin pills. I like to take brewer's yeast along with blackstrap molasses to give me another source of iron from time to time. Brewer's yeast contains all the B vitamins and minerals. Peppermint and hyssop tea -- in our home, we drink a lot of peppermint tea. We find it to be helpful in relieving nervous tension and in dispelling gas from the body. It has also aided in relieving menstrual cramps. Comfrey and rosehip tea -- We are fortunate to have an herb garden. One of the herbs we grow is organic comfrey. We drink comfrey regularly. We are told that comfrey is a good source for healing anemia, colds, healing sores, burns, rashes, headaches, indigestion, nervousness, constipation, upset stomach and diarrhea. The leaves are rich in vitamins A and C. It also contains vitamins B1, B2, niacin and much more. We drink rosehip tea from time to time. We have found rosehip an excellent source in preventing colds. It contains iron. I understand that it can rid the body of worms and contains far more vitamin C than other foods. It also contains vitamins A, E, B1, B2, niacin, minerals, calcium and phosphorus. Catnip and hops -- In the past, we have used these aids in inducing sleep. They are wonderful! Rosemary and sage herbs -- There was a time we used rosemary and sage on a daily basis. My memory improved tremendously. A friend of mine used sage tea to dry up her milk after weaning her baby. She also lost weight while drinking it. Water -- In our family, maintaining proper levels of fluids in the body has resulted in the ability to think more clearly, abundance of energy, relief from stress, anxiety and depression along with other benefits. Water is the first and last in our home. My son Jeffrey drinks nine glasses of distilled water daily. Because of my body weight, I only have to drink seven glasses. Thank God for water! The above foods, while beneficial to many, may not agree with some. For example, some members of my family and some of my friends cannot eat oranges or drink carrot juice. Each individual will have to find out what is best for his or her physical condition and preference. However, I can truly say that I am extremely grateful to the Creator for a diet to rid me of my illnesses, including high blood pressure. These recipes not only have been a blessing tome but also to many others who have tried them. Now as I look in retrospect, I can truly say, for the first time in my life, that I am in good health. Former health problems, such as arthritis, high blood pressure and sinusitis, along with other health problems, have disappeared. I have found the original diet extremely satisfying! My desire to eat between meals has decreased tremendously. I have no plans to return to my former eating practices. In addition, I now have no problem controlling my weight. Life has actually become sweeter and more meaningful, and I can truly agree with Dr. Harrison that proper diet, rest, exercise, water, sunshine, and trust in God will surely give anyone "life at its best." --Eunice Bray-Eubanks
