Chicory

Bloom period Spring through Fall.  These are easily seen from the highway. They bloom at sunrise and then face the sun until it closes at noon. They don't usually open at all on a cloudy day. Dried and roasted roots are added to coffee to be used as an additive. (Louisiana chicory coffee). There is a legend that says a beautiful young blue eyed lady stood by the roadside and waited for the return of her lover and as she stood she cried. She waited until she died and he never returned. Some say the Chicory is the Blue eyed lady.
