Lamb Souvlaki Sandwich

Ingredients:

2 lbs lean lamb cut into cubes

Marinade:
1/2 cup olive oil
1 cup red wine
1 tsp salt
fresh-ground black pepper
1 tsp oregano
1 tsp dried mint, hand-crushed
3 cloves garlic,crushed
8 Pita bread pockets, brushed with olive oil and grilled briefly on both sides.

Instructions:
Marinate cubes of meat (pork works well, too) in a large bowl. Mix two or three times in a 2-hour period. Place on wooden skewers and broil, turning once until tender but still a bit pink on the inside. Serve in the grilled Pita pockets with paper-thin sliced purple onions, thin sliced ripe tomatoes and plain yogurt on top.

Makes 8 sandwiches.
