Guiness Icecream

In an inspired move, someone who writes for Gourmet Magazine came up with the Brilliant idea of making an icecream flavored with that already creamy and deligtful elixir of life, Guiness Stout.

While it is already fall, and probably not the ideal weather for icecream, there are still some brilliantly clear, warm days with just a hint of cripness. Perfect for something smooth and creamy, and the Guiness flavor makes it excusable for a tailgate party, or the last barbecue before the rains come.

This recipe is for my friend James.

Ingredients

• 1 C water
• 2 Tbsp cornstarch
• ½ C sweetened condensed milk
• 1 ½ C evaporated milk
• ¼ tsp salt
• ½ C sugar
• ½ C Guiness stout

Instructions

• In a heavy saucepan, whisk together the water and cornstarch and simmer over moderate heat (stir continuously) for two minutes.
• Add the condensed milks, salt and sugar. Heat over moderately low heat, whisking for 1-2 minutes until the sugar is disolved.
• Remove the pan from the heat and let the mixture cool.
• Stir in the Guiness and freeze the mixture in an icecream freezer.
• Be decadent.

For those of you who are more daring (or more midwestern), you could substitute the Guiness for Bud Light, but I really wouldn't suggest it.
