Lactose-Free Carob Cake Donuts
Ingredients
- 1 Chicago Metallic Baked Mini Donut Pan (I got mine from a catalog), lightly sprayed with Pam
- 1-1½ cups flour
- 1/3 cup carob (unsweetened)
- 1 tsp. baking powder
- a dash of salt
- 2 eggs
- 2/3 cup sugar
- 1 tsp. vanilla
- ½ cup lactose-free Edensoy soymilk
- 2 tablespoons lactose-free butter, melted
Directions
1) In a small bowl, combine flour, carob, baking powder and salt. In a large bowl, mix eggs, sugar, and vanilla with an electric mixer until thick. Combine soymilk and butter and add to egg mixture, alternating with flour mixture.
2) Place around 2 level tsp. of batter in each cup of pan. Bake in preheated 325° F oven around 8 minutes. Let cool in pan 1 minute, then carefully remove. Repeat with rest of batter. When cool, sprinkle with powdered sugar or frost with icing.
