Potato Flour Muffins

Directions

1) Sift potato flour with baking powder and salt.  Add sugar.
2) Beat the egg yolks.  Beat egg whites until stiff and fold into yolks. 
3) Add the flour mixture very slowly, folding in gently.
4) Sprinkle the ice water on top and fold in.
5) Spoon lightly into greased pans and bake at 375º F for 20 minutes.
