Lactose-Free Sugar Cookies
Ingredients:
- 3 cups all-purpose flour
- ½ tsp. baking soda
- 1 cup Fleischman's Unsalted Margarine, softened
- 1 cup sugar
- 1 tsp. vanilla extract
- 1 egg
- Colored sugar or other decoration, optional
Combine flour and baking soda; set aside. In large bowl, with electric mixer at medium speed, beat margarine, sugar, and vanilla until creamy, about 5 minutes. Beat in egg until light and fluffy. Gradually blend in flour mixture. Divide in half; wrap in plastic wrap. Chill 1 hour.
On floured surface, roll half the dough into 1/8-inch thickness. With floured cookies cutters, cut out cookies. Repeat with remaining dough, re-rolling scraps as needed. Place cookies on ungreased baking sheets. Sprinkle with colored sugar crystals if desired. Bake at 375° F for 8 to 10 minutes or until light golden. Remove from sheets; cool on wire rack. Decorate with icings if desired. Makes 4 ½ dozen cookies.
